Herbed Potato Bake

Prep Time: 12 minutes
Cooking Time: 1 hour
Serves 4 – 6


6 medium potatoes
2 red onions
2 large zucchini
2 scallions
3 1/2 oz salami (optional)
1 1/4 cups sour cream
2 garlic cloves, crushed
2 TB parsley, chopped
2 TB chives, chopped
1/4 cup dry breadcrumbs


Preheat oven to 350 degrees F
Brush a large, shallow casserole dish with melted butter

1. Thinly slice potatoes, onions, zucchini, scallions and salami (if you want to add meat).
2. Combine the sliced vegetables and salami with the cream, garlic and herbs in a large bowl. Season with salt and freshly ground black pepper, then mix well. Transfer the mixture to the casserole dish and smooth the surface.
3. Cover with foil. Bake for 20 minutes.
4. Remove foil and sprinkle with breadcrumbs; bake on the top shelf of the oven for 40 minutes or until golden and potatoes are tender.
