Corn and Cheese Chowder

Preparation Time: 15 minutes
Total Cooking Time: 30 minutes
Serves 8

Ingredients:

3 1/4 oz butter
2 large onions, chopped
1 garlic clove, crushed
2 ts cumin seeds
4 cups vegetable stock
2 medium potatoes, peeled and chopped
1 cup canned cream corn
2 cups fresh corn kernels
1/4 cup fresh parsley, chopped
1 cup grated cheese
1/4 cream (optional)

Directions

1. Heat butter in stock pot. Add onion, cook over high heat for 5 minutes.
2. Add garlic and cumin seeds, cook 1 minute, stirring constantly. Add vegetable stock. Bring to a boil. Add potato, reduce heat. Simmer uncovered 10 minutes.
3. Add creamed corn, corn kernels and parsley. Bring to boil, reduce heat and simmer 10 minutes.
4. Add cheese and cream. Stir until cheese melts. Serve immediately.
