Colache – TexMex Butternut Squash

2 TB vegetable oil
1 Butternut squash (2 pounds), peeled, seeded, and diced
1 onion, chopped
1 clove garlic, minced
1 can 14 1/2 ounces diced tomatoes, undrained
1 green bell pepper, chopped
1 can (14 1/2 oz) whole kernel corn, drained
1 canned green chili, diced
salt and pepper
1.Â Heat oil in large deep skillet over medium heat.Â Add onions and cook until transparent (about 3 minutes).Â Add garlic, let cook 30 seconds, then add squash.Â Cook 5 minutes.
2.Â Add canned tomatoes and bell pepper to skillet.Â Bring to boil, turn down heat, cover and simmer 15 minutes.
3.Â Add corn, chili, sat and pepper.Â Simmer, covered, 5 minutes.Â Uncover, increase heat, and cook until juices have evaporated.
4.Â Serve with crispy corn tortillas or tortilla chips.
