Tandoori Style Chicken Wings with a Yogurt Sauce

I decided today that I could probably eat Indian food everyday for the rest of my life and not get bored. Here’s a bit of a twist on tandoori chicken (as I do not have Tandoori oven in my house).

Tandoori Style Chicken Wings with a Yogurt Sauce
Prep. Time: 5 minutes
Cooking Time: 25 minutes
Serves 4

Ingredients:

1 TB ginger, minced
1 TB ground coriander
1 1/2 ts ground cumin
1 ts ground tumeric
1/2 ts ground cinnamon
1/2 ts salt
1/4 ts cayenne pepper
24 chicken wings

Yogurt Sauce:
1 cup whole milk yogurt
2 TB fresh cilantro
1 garlic clove, minced
salt
cayenne pepper

Directions:
1. Preheat oven to 400 degrees F.
2. Combine and mix all ingredients except for the chicken.
3. Rub spice mix over chicken wings.
4. Place chicken on baking sheet. Bake in oven for 25 minutes.
5. To make yogurt sauce. Combine all ingredients and mix well.

Black Bean and Sweet Potato Cakes

This is a crazy yet delicious sounded dish. I found it in my Everyday Food: Great Food Fast book.

Spicy Black Bean Cakes
***Vegetarian Recipe***

Prep. Time: 20 minutes
Cooking Time: 10 minutes
Serves 4

Ingredients:

2 TB olive oil
4 green onions, thinly sliced
6 cloves of garlic, pressed
2 jalepeno chilies, chopped
1 TB ground cumin
2 cans (15 oz. each) black beans, drained
salt
black pepper
1 large sweet potato, peeled and grated
1 egg, beaten
1/2 cup bread crumbs

Lime Sour Cream:
1/2 cup sour cream
2 ts fresh lime juice
1 jalepeno chili, minced
salt

Directions:
1. Turn your oven to 475 degrees F or turn on your broiler. In a small skillet over medium heat, warm 1 TB olive oil. Cook the green onions 1 minute. Add the garlic, jalapeno, and cumin. Cook for 30 seconds. Transfer to a large bowl.
2. Add the beans to the bowl; mash with a fork leaving about 1/4 of the beans whole. Season with salt and pepper.
3. Fold in the grated sweet potatoes, egg and bread crumbs.
4. Divide into 8 equal patties.
5. Brush a baking sheet with 1 TB olive oil. Place the patties on the baking sheet, 1/2 inch apart. Broil for 8 to 10 minutes. Turn patties over and broil 3 more minutes. Serve with lime sour cream.

Mint and Pea Hummus with Pita Bread

Mint and Pea Hummus with Pita Bread

Total Time: 20 minutes

I found this recipe in

Ingredients:
1 TB olive oil
3 small leeks, chopped
4 cups shelled peas, fresh or frozen
3/4 cup vegetable broth
2 TB tahini
2 TB mint, chopped
1 ts salt
1/2 ts black pepper
6 pitas, cut into wedges and toasted

Directions:
1. In a large saute pan, heat olive oil over medium heat. Add leeks, cover and cook for 7 minutes. Add peas and cook uncovered for 8 minutes (only 5 if frozen peas). Add broth and cook 3 more minutes.
2. Remove from heat, stir in tahini and mint, and spoon mixture into the bowl of food processor. Process until fairly smooth. Add salt and pepper, seasoning as desired.
3. Place in a bowl and serve with toasted pitas.

Double Layered Vegetarian Cheese and Chili Quesadillas

Southwestern Quesadillas
Vegetarian Recipe
Can be either a dinner or appetizer.

Total Time: 15 minutes
Can be cut into 8 appetizer sized slices.

Ingredients:

3 — 8 inch flour tortillas
olive oil (for coating tortillas)
1/2 ts chili powder
1/2 ts ground cumin
1 cup shredded cheese
1 can (4 oz.) diced green chilies

Directions:
***Preheat oven to 450 degrees F.***
1. Brush one side of flour tortilla with olive oil. Sprinkle with chili powder and cumin.
2. Place tortilla on a baking sheet, spice side down. Top with 1/2 the cheese and chilies.
3. Top with second tortilla. Add remaining cheese and chilies.
4. Top with third tortilla. Coat top of tortilla with olive oil, chili powder and cumin.
5. Broil quesadilla until tortillas are golden brown and cheese is melted.

Sausage Triangles

Sausage Triangles

Total Time: 50 minutes

Ingredients:
1 lb. ground pork
1 onion, chopped
1 ts dried sage
1/2 ts salt
1/2 ts ground black pepper
1/2 ts crushed red pepper flakes
1 (17 1/4 oz.) package frozen puff pastry sheets, thawed
flour, for dusting
1 egg, beaten
1 cup Worcestershire sauce

Directions:
1. Preheat oven to 350 degress F.
2. Combine pork, potato, onion, sage, salt, pepper, and pepper flakes in a bowl.
3. Unfold 1 pastry sheet; following folding marks, cut the sheet into 3 rectangles. Cut each rectangle into four squares. Cut each square into 2 triangles.
4. Place 1 TB of sausage mixture onto each triangle. Fold one corner of the puff pastry over to another corner. Press edges together with fingers or fork.
5. Place triangles on baking sheet, seam side down. Brush the top with beaten egg.
6. Bake for 35 minutes.
7. Serve warm with side of Worcestershire sauce.

Vegan Recipe

Prep. Time: 15 minutes
Cooking Time: 25 minutes

Ingredients:
1 cup of mixed nuts (almonds, walnuts, peanuts, Brazil nuts)
1 cup sunflower seeds
1 cup cashew nuts
3/4 cup macadamia nuts
1/2 cup tamari

Directions:
1. Preheat oven to 275 degrees F. Lightly grease two baking sheets.
2. Place all ingredients (except tamari) in a bowl. Pour the tamari over the nuts. Toss the mixture until evenly coated.
3. Spread the nuts evenly on the two baking sheets. Bake for 25 minutes.
4. Cool completely and store in an airtight container for up to 2 weeks.

Hot and Spicy Chicken Wings

Hot and Spicy Chicken Wings

***This is my husband’s famous chicken wings recipe***
Total Time: 30 minutes

Ingredients:
Chicken Wings
FrankÅ› hot sauce
butter
(Amount of ingredients will change depending on how many wings you want to prepare. Franks to butter is a 2:1 ratio–this will make your wings pretty darn spicy.)

Directions:
1. Preheat oven to 350 degrees F.
2. Melt your butter in a microwave safe bowl. Mix Franks into the butter.
3. Place wings on baking sheets. Brush both sides of your chicken wings with Franks Butter.
4. Cook for 15 minutes. Flip and add more Franks butter. Cook 10 minutes more.
5. Flip and coat with more Franks butter. Set oven to broil and broil wings for 3 to 5 minutes.
6. Enjoy them while they are hot!

Guacamole Platter

Guacamole Platter
This not only looks pleasing to the eye, but is super tasty as well. A hit at every party.

Total Time: 15 minutes

Ingredients:
4 ripe avocados
1/2 cup lime juice
3 garlic cloves, crushed
2 TB olive oil
1/2 ts salt
1/4 ts pepper
1 cup shredded cheese
1 cup roma tomatoes, diced
1/2 cup onions, chopped
1/4 cup sliced jalapenos
1/4 cup prepared salsa
Tortilla chips

Directions:

1. Cut avocados in half, remove pits and scoop into food processor. Add lime juice, garlic, olive oil, salt and pepper. Process until smooth.
2. Spread avocado mixture onto large serving platter.
3. Top with cheese, then tomatoes, then onions, then jalapenos, then salsa. Leave a border around each new topping so people can see what is underneath.
4. Serve with chips.

Slow Cooker Chili

Super Bowl Sunday is coming up this week, so I thought I should concentrate on party foods, drinks and appetizers. If you are not attending or throwing a party this weekend, save these posts for when you do.

For starters, letÅ› start with Slow Cooker Chili.

Ingredients:

8 strips of bacon, chopped
1 lb. ground beef
1 lb. ground pork
28 oz. can stewed tomatoes
1 – 16oz. can tomato sauce
1 – 6oz. can tomato paste
2 – 16 oz. cans kidney beans
2 cups carrots, chopped
1 onion, chopped
3 cloves garlic, minced
1 cup celery, chopped
1 cup green pepper, chopped
1 TB chili powder
1 ts salt
1 TB cumin
1 ts black pepper
1 TB Worchestershire
2 ts Franks hot sauce
1 ts cayenne pepper
1 ts paprika
1 ts brown sugar

Directions:

1. Cook bacon in skillet until crisp. Remove to paper towel to drain.
2. Brown beef and pork in bacon drippings in skillet.
3. Combine all ingredients in slow cooker.
4. Cover. Cook on LOW 9-10 hours. Stir occasionally.

New Year's Party Appetizers

Well, Happy New Year to all!

I traveled to the depths of the Internet to find some recipes for some great tasting appetizers that will make any New Year’s Party a long lasting memory.

Anitpasto Crescents

Ingredients:

2 pkgs. refrigerated crescent rolls
1/4 lb. ham slices
1/4 lb. pepperoni slices
1/4 lb. salami slices
1/4 lb. provolone cheese — sliced
1/4 lb. Swiss cheese slices
1 sm. jar roasted red peppers — optional
3 eggs
1/4 C. Parmesan cheese
2 Tbs. water

Directions:
1. Preheat oven to 400°F.
2. Spray rectangle baking dish with nonstick spray.
3. Unroll 1 can of crescent rolls and lay on bottom of pan.
4. Layer meat and cheeses, ending with all of the roasted peppers on top.
5. Beat eggs and water in small bowl, add parmesan cheese and pour over layers.
6. Unroll second can of crescent rolls and lay over layers.
7. Brush top layer with bit of egg mixture still remaining in bowl.
8. Bake for 45 minutes or until top is golden brown. Cool and cut into small squares. Serve warm.

Egg salad Wonton Cups

Ingredients:
36 wonton wrappers
3 cups egg salad (your own recipe)
1/3 cup green onions (chopped)
1/3 cup carrot (shredded)
2 tomatoes, chopped
fresh parsley for garnish

Directions:

1. Preheat the oven to 350 degrees F.
2. Coat one side of each wonton wrapper with nonstick cooking spray.
3. Take the wonton wrappers and gently press the coated side down into miniature muffin cups.
4. Bake the wontons for 10-12 minutes or until they turn golden brown.
5. Remove wontons from oven and place on wire racks to cool.
6. Combine the egg salad, onions and carrot and mix well. Stir in the bacon.
7. Spoon about 1 Tablespoon of the egg salad into each wonton cup.
8. Complete by garnishing each cup with the cut tomatoes and a little parsley.

Seasoned Pecans
Ingredients

4 teaspoons kosher salt
1/2 teaspoon cayenne
1 teaspoon white pepper
1 teaspoon nutmeg
1 teaspoon ground cloves
1 teaspoon allspice
4 cups pecan halves
1/4 cup butter – melted
1/3 cup molasses

Directions

1. Preheat oven to 350°.
2. In a medium bowl, combine salt, cayenne, white pepper, nutmeg, cloves and allspices.
3. Add the pecans and toss well to coat.
4. Drizzle melted butter oven pecans and mix well.
5. Spread out onto a rimmed baking sheet, scraping any spices and butter from the bowl and spreading the nuts into a single layer.
6. Bake until lightly toasted, stirring occasionally for approximately 9 minutes.
7. Drizzle molasses over the nuts, stir and bake for another 10 minutes or until the nuts turn glossy and slightly dark.
8. Allow to cool on the pan.
9. Pour into a bowl and break apart any large clumps or clusters.

Black-eyed Pea Dip

Black-eyed Pea Dip

Ingredients:

1 can (16 ounces) black-eyed peas,drained
3 green onions, chopped with tops
1/2 cup sour cream
1 tsp. garlic salt
1/2 cup salsa
4 slices bacon, cooked and crumbled

1. Reserving 1/3 cup, place peas in a blender.
2. Process until smooth. Blend in onions, sour cream and garlic salt.
3. Transfer to a bowl and stir in reserved peas and bacon.
4. Serve with tortilla chips, bagel chips or corn chips.

Purple Forgiveness

Ingredients:
32 Ounces of Ginger Ale
32 Ounces of Grape Juice
12 Ounces of Cranberry juice
12 Ounces of Vodka.

Directions:
1. Two or three nights before the party fill a freezer safe small pot or plastic bowl with cool water. You want to make sure the pot or bowl is at least 8 inches, and fill it at least 3 inches deep. Put in freezer.
2. Make sure all of the juice and ginger ale is chilled in the fridge at least 12 hours before the party.
3. About 20 minutes before the party mix all the ingredients together in a large punch bowl.
4. Next, run warm water over the bottom of the pot that you froze water in to loosen the ice ring.
5. Once the ice ring is out of the pot or bowl, place it into the center of your punch, and let it float around.
