Tamari Nut Mix

Tamari Nut Mix
Vegan Recipe

Prep. Time: 15 minutes
Cooking Time: 25 minutes

Ingredients:
1 cup of mixed nuts (almonds, walnuts, peanuts, Brazil nuts)
1 cup sunflower seeds
1 cup cashew nuts
3/4 cup macadamia nuts
1/2 cup tamari

Directions:
1. Preheat oven to 275 degrees F. Lightly grease two baking sheets.
2. Place all ingredients (except tamari) in a bowl. Pour the tamari over the nuts. Toss the mixture until evenly coated.
3. Spread the nuts evenly on the two baking sheets. Bake for 25 minutes.
4. Cool completely and store in an airtight container for up to 2 weeks.

Cheese Sticks

Cheese Sticks

Ingredients:

1 1/2 cups coarsely grated extra-sharp Cheddar
1 cup all-purpose flour
3/4 stick cold unsalted butter, cut into tablespoons
1/2 ts salt
1/2 ts pepper
1 1/2 TB milk

Directions:

1. Preheat oven to 350 degrees F.
2. Pulse cheese, flour, butter, salt, and pepper in a food processor until mixture resembles coarse meal. Add milk and pulse until dough forms a ball.
3. Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12- by 10-inch rectangle (1/8 inch thick).
4. Cut dough with a lightly floured sharp knife into 1/3-inch-wide strips. Carefully transfer to 2 ungreased baking sheets, arranging strips 1/4 inch apart. (If strips tear, pinch back together.)
5. Bake, switching position of sheets halfway through baking, until pale golden, 15 to 18 minutes. Cool completely on baking sheets on racks, about 15 minutes.

Spicy Pretzels

Ingredients:

20oz bag of pretzel sticks
1 pkt Ranch dressing mix
1 ts cayenne pepper
1 ts garlic salt
1/2 cup vegetable oil

Directions:

1. Preheat oven to 225.
2. Mix pretzels, oil, dressing mix, and spices. Divide pretzels over two sheet pans.
3. Bake for an hour or so total, stirring and rotating pans every 15-20 minutes. the pretzels will deepen in color and soak up all the oil. Allow them to cool before serving.

Chocolate Chip Granola Bars

Ingredients:

4 1/2 cups rolled oats
1 cup all-purpose flour
1 ts baking soda
1 TB vanilla extract
2/3 cup butter, softened
1 1/2 cups honey
1/4 cup packed brown sugar
3 cups semisweet chocolate chips

Directions:

1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9×13 inch pan.
2. In a large mixing bowl combine oats, flour, baking soda, vanilla, butter, honey and brown sugar. Stir in the 3 cups assorted chocolate chips.
3. Pour mixture into 9×13 pan and lightly press mixture into the pan. Bake at 325 degrees F (165 degrees C) for 20 to 25 minutes or until golden brown.
4. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

Pistachio Biscotti

Pistachio Biscotti

I’ve changed it a bit to gear it towards my taste buds.

Ingredients

1 1/2 cups pistachios, peeled
1/2 cup (1 stick) unsalted butter
3 eggs
1 cup sugar
1 TB vanilla extract
3 1/2 cups all-purpose flour
1 ts baking powder
1/2 ts salt

Directions

1. Preheat oven to 350 degrees F.
2. Lay the pistachios on a cookie sheet in a single layer. Bake 10 minutes or until the nuts are lightly toasted. Remove from the oven.
3. In an electric mixer, beat the butter until light and fluffy. With the mixer running, gradually add the eggs, sugar, and vanilla; mix until creamed. Add the flour, baking powder, and salt. Mix the dough until smooth. Using a wooden spoon, mix in the pistachios until evenly distributed.
4. Put the dough on a lightly floured surface and cut in half. Roll each half into a log (each 12 inches long by 1-inch high).
5. Place logs on an ungreased cookie sheet and bake for 35 minutes or until the bottoms are lightly brown.
6. Let logs cool for 5 minutes, then place on a cutting board. Slice each log on a diagonal into 12 1-inch thick pieces. Lay cookies on one side (back on cookie sheet) and bake 5 minutes. Turn cookies over and bake the other side for another 5 minutes.

Cayenne Chickpeas

I have discovered the beauty of making homemade snacks! They are so yummy, easy and much healthier than store bought snacks. So, this week I would like to share some of my favorite recipes.

Cayenne Chickpeas

Ingredients:

2 cans chick peas, drained
1 TB cooking oil
1 TB each Cayenne and chili powder
salt and pepper to taste

Directions:

1. Preheat oven at 400 degrees F.
2. Combine all ingredients in mixing bowl and mix well.
3. Bake for 20 minutes or until crunchy. Stir once half way through cooking.
