English Muffin Pizza with Garlic Green Beans

Save this recipe for a night when you really DO NOT want to cook. It is made up of ingredients I usually have on hand anyway.

English Muffin Pizza
Prep. Time: 5 minutes
Cooking Time: 15 minutes
Serves 4

Ingredients:
4 English Muffins
1 (14 oz.) can tomato sauce
1 TB thyme
1 TB oregano
2 cups shredded mozzarella cheese
2 TB olive oil
1 bag (16 oz.) frozen green beans
3 cloves garlic, minced
1 ts salt
1/2 ts black pepper

Directions:
1. Preheat oven to 400 degrees F.
2. Break your 4 english muffins in half and place them on baking sheet.
3. Top each muffin with tomato sauce, then cheese.
4. Bake in oven for 15 minutes.
5. While you pizza bakes, microwave your green beans in a bowl (w/ a little bit of water) for 3 minutes. Drain.
6. Heat skillet with 2 TB olive oil. Add green beans, stir and cook for 5 minutes. Add garlic and cook 2 minutes.

Vegetarian Pizza

I have been wanting to hone my skills as a bake sheet pizza maker for quite sometime now. Today is the day! I thought I would start with an easy tomato sauce based vegetarian pizza. I’m sure I will need to make adjustments along the way, but here’s to starting something new!

Vegetarian Pizza
***This is a Vegetarian Recipe***

Prep. Time: 30 minutes
Cooking Time: 30 minutes
Serves 4

Ingredients:

Pizza Base:
1/4 inch dry yeast
1/2 ts salt
1/2 ts sugar
2 1/2 cups flour
2 TB olive oil

Pizza Sauce:
1 TB olive oil
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz.) tomato sauce
basil
oregano
thyme

Toppings:
YOUR CHOICE + 2 cups grated mozzarella cheese


Directions:

1. Preheat oven to 400 degrees F.
2. Combine the yeast, salt, sugar in 1 cup warm water. Leave covered in a warm place for 10 minutes.
3. Sift flour into a bowl make a hole in the center of the flour; add yeast to the hole when it is ready (you will see bubbles or foaminess). Mix to make a dough.
4. Knead the dough on a lightly floured surface for 5 minutes.
5. Brush oil on to a baking sheet. Sprinkle with flour. Roll dough out so it fits the dimensions of your baking sheet. Add to baking sheet. Press down lightly.
6. Top your pizza with sauce, then toppings, then shredded cheese.
7. Bake at 400 degrees F for 30 minutes.

Mexican Pizza with Flour Tortillas

Mexican Pizza with Flour Tortillas


Ingredients:

1/2 pound ground beef
1 onion, diced
1 clove garlic, minced
1 TB chili powder
1 ts ground cumin
1/2 ts paprika
1/2 ts black pepper
1/2 ts salt
1 (16 ounce) can refried beans
4 (10 inch) flour tortillas
1/2 cup enchilada sauce
2 cup Sharp Cheddar cheese, shredded
2 green onions, chopped
2 tomatoes, diced
1/4 cup canned diced chillies
1/4 cup sour cream

Directions:

1. Preheat the oven to 350 degrees. Coat 2 pie plates with non-stick cooking spray.
2. Place beef, onion and garlic in a skillet over medium heat. Brown beef. Drain grease from skillet.
3. Season the meat with chili powder, cumin, paprika, salt and pepper.
4. Lay one tortilla in each pie plate, and cover with a layer of refried beans.
5. Spread half of seasoned ground beef over each one, then cover with a second tortilla.
6. Bake for 10 minutes.
7. Remove the plates from the oven, and let cool slightly. Spread half of the enchilada sauce over each top tortilla. Cover each pizza with half of the shredded cheese.
8. Cover each pizza with green onions, tomatoes, and diced chilies.
9. Return pizzas to the oven, and bake for 10 more minutes.
10. Slice and serve with dollop of sour cream.

Feta, Tomato and Olive Pizza

Feta, Tomato and Olive Pizza

Prep Time: 30 minutes PLUS 1 hour rising
Cooking Time: 50 minutes
Serves 4-6

Ingredients:

1/8 oz dry yeast
3/4 cup all purpose flour
3/4 cup whole wheat flour
1 TB olive oil

1 TB oil
2 onions, sliced
2 ts brown sugar
2 TB olive paste
9 oz cherry tomatoes, halved
9 oz feta, crumbled
1/4 cup fresh basil, shredded

Directions:

1. Making the dough: Place yeast and flours in large bowl and mix well. Make a well in the center and add oil and 1/2 cup warm water. Mix well, adding a little more water if dough seems too dry, then gather together. Turn dough onto lightly floured surface and knead for 5 minutes, the place in lightly oiled bowl. Cover with plastic wrap and leave in draft free area for 1 hour.
2. Heat the oil in a frying pan and cook the onion over medium heat for 20 minutes, stirring often. Stir in the sugar and cook for 2 minutes. Cool.
3. Preheat oven to 425 degrees F. Punch down the dough and knead for 1 minute. Roll out to a 12 inch round, then fold the edges to create a crust. Sprinkle an oven tray will oil and place dough on the tray.
4. Spread the paste over the dough, leaving a 1/2 inch border. Top with onion, then arrange tomatoes on top of the onions. Sprinkle with feat and basil.
5. Bake for 25 minutes.

Inside Out Pizza

Inside Out Pizza
Prep and Cook Time: 30 minutes
Serves 4

Found in:

Ingredients:

1 TB Olive Oil
2 garlic cloves, chopped
2 pinches red bell pepper flakes
1 can diced tomatoes (15 oz.)
1/2 ts dried oregano
salt and black pepper
8 8-inch flour tortillas
1 pound ball smoked mozzarella cheese, sliced thin
1 cup fresh basil, 20 leaves, torn

Directions:

1. Heat small skillet over med. heat. Add TS olive oil. Add garlic and red bell pepper flakes. Cook for 1 minute.
2. Add tomatoes and season with oregano, salt and pepper. Simmer for 2 minutes, then remove from heat.
3. Heat medium skillet over med. heat. Add drizzle of olive oil, then 1 flour tortilla. Cover tortilla with even layer of sliced cheese. Top with 1/4 of the tomato mixture. Scatter 1/4 basil over tomatoes.
4. Set second tortilla above everything. Cook for 2 minutes, drizzle oil on top tortilla, then flip the whole thing over. Cook 2 minutes more.
5. Remove and cut into 4 pieces.
6. Repeat 3 more times.
