Bacon and Onion Rosti

Bacon and Onion Rosti

Prep. Time: 30 minutes + 1 hour refrigeration
Cooking Time: 40 minutes
Serves 4

1.75 pounds potatoes, halved
2 oz butter
6 slices bacon, chopped
1 red onion, chopped
2 cloves garlic, crushed
2 TB parsley, chopped
1 ts oregano
1 ts thyme

1. Boil potatoes until tender. Drain, cover and refrigerate for 1 hour. Peel the potato and grate into a bowl.
2. Heat half the butter in a 9 inch heavy based non-stick frying pan. Add bacon, onion, and garlic. Stir for 2 minutes. Add to the potato. Add the herbs and mix well.
3. Add a little butter to the pan, spread the potato mixture over the base and press with spatula. Cook over medium heat for 8 minutes, or until a crust forms at the base. Shake the pan occasionally to stop the potato from sticking.
4. Slide the rosti onto a greased plate, add remaining butter to pan and when melted flip to rosti back into the pan on its uncooked side. Cook for 6 minutes.

Stuffed Green Peppers

6 large green peppers
1 pound ground beef, browned
2 TB minced onion
1 ts salt
1 ts garlic powder
2 cups cooked rice
1 can tomato sauce (15 oz.)
1 cup shredded mozzarella cheese


1. Cut peppers in half and remove seeds.
2. Combine all ingredients except peppers and cheese.
3. Stuff peppers with ground beef mixture. Place in slow cooker.
4. Cover. Cook on LOW 6-8 hours, HIGH 3-4 hours. Sprinkle with cheese last 30 minutes.

Beef Fajita Burgers

Beef Fajita Burgers

Takes 20 minutes
Makes 4 servings


1 1/2 pounds ground beef
3 TB Worcestershire Sauce
1 1/4 TB chili powder
1 1/4 ts ground cumin
2 TB thyme (fresh or dried)
Hot Sauce to taste
3/4 TB grill seasoning
4 hamburger buns

1 TB olive oil
2 red bell peppers, sliced
1 yellow onion, sliced
1 jalepeno chile, chopped
2 cups green salsa


In a bowl, combine beef, worchestire sauce, chili powder, cumin, thyme, hot sauce and grill seasoning; mix well. Form into 4 patties.

Heat olive oil in saute pan over medium heat. Add bell peppers, onions and jalepenos; saute until tender. Stir in salsa and heat just until warmed.

Grill burgers to desired doneness.

Place burgers on buns and top with pepper/onion mix.
