5 Recipes for $58

I am $8 over this week, but I feel like the recipes are worth it. There is a great mixture of hot comfort food and cool spring time fresh food. I found a new combination of flavors (mint and olives! who knew?) this week and also discovered a new cheese that tastes like bacon (not gouda, but fontina–it’s cheaper!). Slow Cooker Chili

Super Bowl Sunday is coming up this week, so I thought I should concentrate on party foods, drinks and appetizers. If you are not attending or throwing a party this weekend, save these posts for when you do.

For starters, letÅ› start with Slow Cooker Chili.

Ingredients:

8 strips of bacon, chopped
1 lb. ground beef
1 lb. ground pork
28 oz. can stewed tomatoes
1 – 16oz. can tomato sauce
1 – 6oz. can tomato paste
2 – 16 oz. cans kidney beans
2 cups carrots, chopped
1 onion, chopped
3 cloves garlic, minced
1 cup celery, chopped
1 cup green pepper, chopped
1 TB chili powder
1 ts salt
1 TB cumin
1 ts black pepper
1 TB Worchestershire
2 ts Franks hot sauce
1 ts cayenne pepper
1 ts paprika
1 ts brown sugar

Directions:

1. Cook bacon in skillet until crisp. Remove to paper towel to drain.
2. Brown beef and pork in bacon drippings in skillet.
3. Combine all ingredients in slow cooker.
4. Cover. Cook on LOW 9-10 hours. Stir occasionally.

Cowboy Spaghetti

I’m low on a great deal of supplies today. I love love love! Rachel Ray’s recipe books
because I can always find something in there that only involves the staples I keep around my house.

So, this is what I’ll be having tonight for dinner. As always I’ve made a few minor adjustments to make it more my style. You should do the same!

Cowboy Spaghetti

Ingredients:

1 pound spaghetti
1 TB olive oil
3 slices bacon, chopped
1 pound ground hamburger
1 medium onion
4 garlic cloves, chopped
black pepper
2 ts hot sauce
1 TB Worcestershire sauce
1 14 ounce can chopped tomatoes
1 8 ounce can tomato sauce
8 ounces sharp cheddar cheese

Directions:

1. Bring large pot of water to boil, then add spaghetti. Cook pasta according to directions of package.
2. Heat a deep skillet over high heat. Add olive oil and bacon. Brown bacon (5 minutes). Remove with slotted spoon and drain on paper towel.
3. Add ground beef to same pan and brown 4 minutes. Add onions, garlic and mix into meat. Season everything with salt and pepper, hot sauce and Worcestershire. Cook 5 minutes.
4. Stir in tomatoes and tomato sauce.
5. Add the hot spaghetti to the meat sauce and mix together. Grate cheese over pasta and serve.

Slow Cooker Enchiladas

Slow Cooker Enchiladas
Slow Cooker Recipe

Serves 4

Ingredients:

1 pound ground beef
1 onion, chopped
1 green bell pepper, chopped
16 oz can kidney beans, drained
15 oz. can black beans, drained
10 oz. can diced tomatoes
1 can diced green chilis
1/3 cup water
1 1/2 ts chili powder
1/2 ts ground cumin
1/2 ts salt
1/4 ts pepper
1 cup shredded sharp cheddar cheese
1 cup monterey jack cheese
6 flour tortillas

Directions:

1. Cook beef, onions, and green peppers in skillet until browned and veggies are tender.
2. Add next 9 ingredients and bring to boil. Reduce heat. Cover and simmer 10 minutes.
3. Combine cheeses.
4. In slow cooker, layer about 3/4 cup beef mixture, one tortilla, and 1/3 cup cheese. Repeat layers.
5. Cover. Cook on LOW 5-7 hours.
6. To serve, reach to bottom with each spoonful to get all layers, or carefully invert onto large platter and cut into wedges.
7. Serve with guacamole and sour cream.

Chinese Hamburger

Happy Monday! This week will focus on Slow Cooker Recipes. I find my crockpot to be my best friend some days. It usually only takes about 20 minutes to prepare the ingredients and then I don’t have to worry about stopping what I’m doing near the end of my day to have dinner ready.

Chinese Hamburger
Slow Cooker Recipe

Serves 8

Ingredients:

1 pound ground beef, browned and drained
1 onion, diced
2 ribs celery, diced
10 3/4 oz. can chicken noodle soup
10 3/4 oz. can cream of mushroom soup
12 oz. can Chinese vegetables
salt and pepper to taste
1 green pepper, diced
1 tsp. soy sauce

Directions

1. Combine all ingredients in slow cooker.
2. Cover. Cook on High 3-4 hours.
3. Serve over rice.

Stuffed Bell Peppers

Stuffed Bell Peppers

Slow Cooker Recipe
Serves 8

Ingredients:

8 large bell peppers
2 pounds ground beef, browned
1 large onion, chopped
1 cup rice, cooked
2 eggs, beaten
1/2 cup milk
1/2 cup ketchup
dash hot pepper sauce
2 ts salt
1/2 ts pepper

Directions:

1. Combine all ingredients except bell peppers. Gently pack mixture into peppers which have been capped and seeded. Place in greased slow cooker.
2. Cover. Cook on LOW 9-11 hours of HIGH 5-6 hours.

Taco Soup with Pizza Sauce

Serves 8-10

Ingredients:

2 pounds ground beef, browned
1 small onion, chopped –Saute in ground beef drippings
1 ts salt
1 ts pepper
1 1/2 packages dry taco seasoning
1 QT pizza sauce
1 QT water
tortilla chips
shredded mozzarella cheese
sour cream

Directions:

1. Combine ground beef, onion, salt, pepper, taco seasoning, pizza sauce and water in 5 quart slow cooker.
2. Cover. Cook on LOW 3-4 hours
3. Top individual servings with tortilla chips, cheese and sour cream
