Flour Tortilla Enchiladas with Pepper and Tomato Salsa

The variety of enchilada recipes out there make me so very happy. I love when recipes mix spicy and creamy together. That just makes my whole mouth happy with every bite!

Flour Tortilla Enchiladas with Hot Tomato Salsa

Serves 4
Prep. Time: 20 minutes
Cooking Time: 20 minutes

Ingredients:

4 oz. cream cheese
3 TB sour cream
1 onion, chopped
15 oz. can kidney beans, drained and rinsed
2 red bell peppers
1 pound tomatoes, quartered
1 can diced green chilies
1 egg
3/4 cup sour cream
1 cup cream
salt
8 flour tortillas
2 TB grated parmesan

Directions:
1. To make the filling: Beat cream cheese, sour cream, onion and kidney beans until well mixed.
2. To make the sauce: If you have a gas stove, turn on burner and blacken the outside of the red bell peppers. Otherwise, broil the peppers for 5-10 minutes until the skin starts to bubble. Wrap peppers in damp towels for 5 minutes. Run peppers under cold water and remove as much of the skin as possible. Cut the peppers in half and remove seeds.
3. Combine peppers, tomatoes, and green chilies in blender. Mix well. Add the egg, cream, sour cream and mix well.
4. To make enchiladas: Preheat oven to 375 degrees F. Pour half the salsa into deep pie dish. Dip tortilla into the sauce until completely covered. Place on working surface, spoon 1/8 of filling, roll tortilla and place at one end of large casserole dish. Continue this process with the remaining tortillas.
5. When all of the tortillas are filled and rolled, cover the top with the remaining salsa and grated cheese.
6. Bake enchiladas for 20 minutes.

Sesame Carrot Salad with a Baked Tomato Crisp

These recipes were part of two other recipes, but I decided to pair them because the flavors go really well together.

Total Time: 10 minutes
Serves: 4

Ingredients:

1 lb carrots, peeled and grated
2 TB sesame seeds
2 TB rice vinegar
1 TB sesame oil
1 inch fresh ginger, peeled and finely chopped
salt and pepper to taste

Directions:

Combine all ingredients in large bowl. Toss until salad is mixed.

Cherry Tomato Crisp
Prep Time: 5 minutes
Cooking Time: 25 minutes

Ingredients:

2 slices white bread
½ cup grated Parmesan
2 TB fresh parsley leaves
1 TB olive oil
1 garlic clove, chopped
salt and pepper
1 ½ pounds cherry tomatoes (can also use grape tomatoes or strawberry tomatoes)

Directions:

1.Preheat oven to 400 degrees F.
2.In food processor, combine bread, cheese, parsley, olive oil, and garlic; season with salt and pepper.
3.Pulse food processor until bread is coarsely chopped.
4.In an 8 inch square baking dish, place tomatoes in a single layer. Sprinkle bread mixture over the top.
5.Bake for 20 to 25 minutes. Until bread is browned on top.

Pasta Salad with Grilled Chicken

Grilled Chicken Pasta Salad

4 Servings
30 Minutes start to finish

Ingredients

1/2 pound short cut pasta
1 onion, chopped
3 garlic cloves, chopped
2 ts tabasco
3 TB Worcestershire Sauce
5 TB red wine vinegar
2 chicken breasts, sliced thinly
2 TB dijon mustard
black pepper
1/4 cup grated Parmesan cheese
2 bunches agrugula, washed, chopped
1 small head radicchio, chopped
2 cups fresh basil, chopped
1/4 cup fresh parsley, handful, chopped
3 celery ribs, thinly sliced
1 ball fresh mozzarella cheese, cut into bite sized pieces
1 pint grape tomatoes, whole

Directions:

1. Cook pasta according to boxes directions.

2. Combine hot sauce, worcestshire sauce, and 2 TB vingar in a medium bowl. Add 1/4 cup of olive oil and mix until well combined. Add chicken to bowl and coat the chicken. Let sit.

3. In a small bowl, combine mustard and remaining 3 TB vinagar with salt and pepper. Whisk in 1/4 olive oil and Parmesan Cheese.

4. When the pasta is done cooking, drain it and add it to the small bowl of dressing.

5. Heat up a saute pan, add a small amount of olive oil. Add onions and cook until translucent. Add garlic, cook for 30 seconds, then add chicken slices. Add cooked chicken to bowl of pasta.

6. Add arugula, raddicchio, tomatoes, salt, and pepper. Mix and serve.
