5 Recipes for $58

I am $8 over this week, but I feel like the recipes are worth it. There is a great mixture of hot comfort food and cool spring time fresh food. I found a new combination of flavors (mint and olives! who knew?) this week and also discovered a new cheese that tastes like bacon (not gouda, but fontina–it’s cheaper!). Tortilla Chip Salad

The recipe sits on the line between a Taco Salad and Nachos. It is really easy to make and tastes great!

Tortilla Chip Salad
Prep. Time: 5 minutes
Cooking Time: 10 minutes

1/2 onion, chopped
1 1/2 pounds ground beef
1/2 bag tortilla chips
1 potato, peeled and grated
2 TB taco seasoning
1 can diced chilis
1 cup sharp cheddar cheese
2 Roma tomatoes, chopped
1 cup sour cream

1. Heat skillet over high heat. Add ground beef and cook. Add potato, diced chilies, taco seasoning. Cover and cook on low until potatoes are cooked.
2. Arrange chips on a plate. Sprinkle meat on top, then cheese, tomatoes. Top with sour cream.

Tortilla Soup

I randomly found Jersey Girl Cooks while looking for recipe ideas.  I love her Tortilla Soup recipe and wanted to share it with you.

Jersey Girl Cooks Tortilla Soup Recipe

Serves 4

Prep. Time: 10 minutes

Cooking Time: 30 minutes


2 TBS olive oil
1 medium onion, finely chopped
2 large cloves garlic, chopped
2 1/2 quarts chicken stock, preferably homemade
1 (28-ounce) can tomato sauce
dried arbol chili peppers, crushed (amount to your liking or another dried pepper)
2 cups frozen corn
1 can (15 oz) black beans, rinsed and drained
4 cups cooked shredded chicken
2 TBS masa harina (fine cornmeal)
1 avocado, pitted, peeled and diced
salt and cayenne pepper to taste
tortilla chips and sour cream for serving


In a large Dutch oven, heat oil and saute onion and garlic for a few minutes or or until it starts to brown. Add chicken stock, tomato sauce, peppers, corn, beans, chicken and masa harina. Bring to boil, reduce heat to low and simmer for 25 minutes. Add avocado and simmer for 5 more minutes. Season with salt and pepper to taste. Top with crushed tortilla chips and sour cream.

Simple Nachos

We all have those nights where we walk around the kitchen opening and closing the cabinets and refrigerator; not knowing what to make for dinner. Those are the nights I make Nachos! Always good and super easy and quick to make.

Here is a super simple Nacho Recipe:
***Vegetarian Recipe***

Serves 4
Prep. Time: 5 minutes
Cooking Time: 15 minutes

4 handfuls of tortilla chips
2 cups shredded cheese
1 onion, chopped
1 15 ounce black beans
1/4 cup canned jalapeno, drained
2 TB taco seasoning

1. Preheat oven to 400 degrees F.
2. Spread chips on a baking sheet. Cover with the rest of the ingredients.
3. Bake in the oven for 15 minutes or until cheese is melted.
4. I like to eat my nachos with ranch dressing and hot sauce!

Guacamole Platter

Guacamole Platter
This not only looks pleasing to the eye, but is super tasty as well. A hit at every party.

Total Time: 15 minutes

4 ripe avocados
1/2 cup lime juice
3 garlic cloves, crushed
2 TB olive oil
1/2 ts salt
1/4 ts pepper
1 cup shredded cheese
1 cup roma tomatoes, diced
1/2 cup onions, chopped
1/4 cup sliced jalapenos
1/4 cup prepared salsa
Tortilla chips


1. Cut avocados in half, remove pits and scoop into food processor. Add lime juice, garlic, olive oil, salt and pepper. Process until smooth.
2. Spread avocado mixture onto large serving platter.
3. Top with cheese, then tomatoes, then onions, then jalapenos, then salsa. Leave a border around each new topping so people can see what is underneath.
4. Serve with chips.
